The natto (fermented soybeans) is one of the indispensable foods to a dining table as a health food from old times.

A soybean is already transmitted in Jomon period (BC 14,000 – 300), and it is said that it is established in the Nara era (AD 710-793) as natto. In addition, it is the food which spread among people so that it is listed in the book from old times. For Sengoku period (civil war), it became a protein source and the stamina source for samurais because of abundant nourishment. Because the enzyme called Nattokinase included in the natto is able to dissolve a blood clot, and the effect lasts about 10-12 hours, it shall remain in effect toward the disease caused by the clot.

The time when it is easy to form the blood clot (cerebral infarction etc) is considered to be 6-8 hours after sleep, and and often becomes sick during sleep. Therefore this is because it is said you should eat natto as dinner to adjust the time of 10-12 hours when Nattokinase acts effectively in the body  when there is easy to be a blood clot.

Generally, natto is often eaten with steamed rice, but it is recommended to use as an ingredient for side dishes including miso soup, toppings of curry, udon and soba noodle and more.
