【ICHIBA JUNCTION】 Super Umami-rich Dashi Stock

"Soup stock" is indispensable to Japanese foods. It is not exaggeration for Japanese people even if saying that I eat every day.

Noodles, stewed food, hotpot and pickles can use it widely; literally "all-around seasoning". A pinch of salt or light soy sauce to dashi stock, and the taste and fragrance just takes off for the cosmos.

By the way, dashi stock has "the first broth" and "the second broth", and there is usage suitable for each.

– The first broth

For Enjoying delicate taste and fragrance. It is said that it should be eaten within ten minutes and is suitable for clear soup.


– The second broth

The usage is infinite. It can be used miso soup and stewed food and anything including fried food.

 

 The chef specializing in Japanese foods has a soup stock recipe only for oneself each.  Interestingly, there is not the" right" way to make dashi stock. There is underlying method of extraction and infusion to bring out the flavour. Every chef does with their own choice of base ingredients in the manner they think the best. How fascinating!

■ Bonito First Dashi Stock Recipe

– Ingredients:

  • 10g Shaved Bonito
  • 1L Water

– Methods:

1. Place the water into a pot, bring to the boil well.
2. Add shaved bonito, then turn off the heat. Leave it until shaved bonito sink to the bottom.
3. Strain over a bowl covered paper towel (or wringed out tea cloth). Do not squeeze bonito on paper towel.
4. Refrigerate after cooling down.
