What is the new way to enjoy Kirin Megumi?

There used to be a chef, who made his reputation that Tasmania has “the restaurant.” Currently he is located in Melbourne and still active as a chef. He is at a restaurant on.

His dignified presence radiates confidence. His persistence that “I present what I think is delicious” may be to be expected, but it is a different matter to make that claim out loud.


Another Face

Mr Shibata has another aspect to him. He was a professional photographer before he opened Mitsuno. He has held personal exhibitions in Melbourne, and he is an amazing photographer. A sense of beauty, which he has cultivated as a photographer, is reflected in his restaurant, Mitsuno.

For example, he created the interior lightening himself. Pictures displayed in the restaurant are also his own works. His sense of style can be seen in arrangements of food on plates. One of Mitsuno’s characteristics is the fact that customers can enjoy not only through their mouths but also through their eyes.

    

His menu does not stop with traditional Japanese dishes and can be described as contemporary cuisine with essences of cuisines from various countries. However, his dishes are created with delicate skills based on Japanese cuisine, which prevent his food from becoming too modern.
 

A New Way to Enjoy, Originated in Mitsuno

  

His impression of Kirin Megumi was “plain with reserved richness and a similarity to Corona beer from Mexico.” He added lemon to Kirin Megumi just like to a Corona beer to try, which turned out to be an unexpected match and it has gained popularity. Added lemon makes Kirin Megumi fresher and easier to drink, and even those who do not prefer beer may be compelled to try and drink. Mr Shibata also says, “It is an amazing match with Japanese dishes.”

Here are three recommendations, which will go well with Kirin Megumi with lemon.

Though the ingredient inside is Japanese mince meat, meaty textures are still there. It is juicy as well as rich with a solid taste. It is a simple dish which can be enjoyed with just squeezed lemon juice. It’s been added as a new dish only a short while ago, but it is rapidly gaining popularity.

This is a western sashimi dish with king salmon caught in Tasmania. The sauce is a cream based mixed with wasabi. The salmon is fatty and yet tastes unexpectedly fresh with its rich and spicy sauce, leaving a clear taste with a hint of wasabi. This dish of course matches with Megumi. This is a new dish specifically produced for Kirin Megumi by Chef Shibata. There is no way this does not go well with Kirin Megumi!

The outside of these scallops are cooked until light brown, and then a sauce of spring onions and soy sauce is poured over them. This dish is simple, maintaining the original flavour of the ingredients. These creamy scallops will certainly stimulate your appetite.

Mitsuno Original Taste

Mr Shibata’s creativity produced not only dishes at the restaurant but also two of the following original products.
 

Chilli miso $8.50


The spiciness is not the main part of this product, but rather miso’s taste was enhanced with a little bit of spiciness. Korean chillis and Japanese sweet miso are combined to create an image of Japanese gochujang. This versatile miso will be great when coating fish, added to fried noodles or melted into soups. The most recommended way to use this is to make a dip by mixing it with either mayonnaise or sour cream. This miso is presented along with a salmon nabe at the restaurant so that customers can try it as they like it.

Teriyaki sauce $8.50


This is a teriyaki sauce mixed with white truffle oil. White truffle oil was chosen because “it is fragrant and adds depth to the taste.” This product is used for tsukune at the restaurant. Because it is a teriyaki sauce, it will match perfectly with fish, chicken and so on. It is also recommended as a marinating sauce.

These two products can be found only at the restaurant and some wholesales shops in the Malvern area. They are limited products which are created with a great deal of time and efforts. We hope you will get to try them.
